This week is Red Beet Soup
This colorful red beet soup is a brighter take on the classic Ukrainian borscht. The sweetness of The Ecology Center spring beets is balanced with the tang of our fermented tomato shrub and deepened with a savory lion’s mane mushroom broth. It is loaded with hearty vegetables such as potatoes and carrots. This soup is best served with a swirl of sour cream or vegan yogurt and fresh chopped dill!

Seasonal Farm Vegetable Soup
Every other week (and sometimes more), our culinary team selects from the most abundant vegetables from our farm to create a simple, delicious, and perfectly seasoned vegan soup for pickup on Saturday. When the soup is made on Friday, we will let you know what vegetables are in it, and our preferred way to serve it.
