Each pasta order is made fresh to order daily and by hand at Brick Restaurant in San Clemente by David Pratt, one of our Community Table Accord Chefs and a longtime partner of The Ecology Center.
The flour sourced for this pasta is of the highest quality from Italian grain. Because pasta is made fresh daily, we recommend cooking it as soon as possible after purchase. However, it can be kept for up to a week. You can also freeze and save for later-- if you freeze it, you don’t need to defrost, just put directly in boiling water!
